Feeling drained by this cold and rainy weather? I have the perfect chicken broth recipe to make you feel rejuvenated and revitalised overnight. It takes less than 30 minutes to prepare and makes four servings. This broth is hearty, delicious and so comforting for a cold winter’s night!
Ingredients:
Extra virgin olive oil, fennel seeds, garlic paste, ginger paste, chicken bone broth, vegetables (such as carrots, potatoes, peas, sweetcorn, swede, red onion), salt and pepper, other seasonings (garlic granules, Italian herb seasoning, paprika, ginger powder), chicken breast.
Method:
- First start by putting a medium sized pot on the hob and turning the heat up to a medium-high level. Add one teaspoon of extra virgin olive oil, fennel seeds, and tablespoon of garlic and ginger paste. Add a splash of water to this base and let that heat up, stirring occasionally with a spatula for 2-3 minutes.
- Once the base of the broth has boiled, add 500ml of chicken bone broth and let it simmer. I use the frozen M&S chicken bone broth discs, which you can pick up from the freezer section of the Northumberland Street store! If you decide to get those, add 2 discs to the pot and cover with 250ml of water, stirring frequently to melt the broth.
- When the discs have melted, add your vegetables. What you put in is completely customisable; I use the ones listed in the ingredients section, but feel free to add whatever vegetables you like! This broth would work well with pulses such as lentils, beans and chickpeas too! Adding these would maximise satiety and make the broth more protein heavy too. Season with salt and pepper, adding in whatever else you like, I use garlic granules, Italian herb seasoning, paprika and ginger powder.
- Once the vegetables have heated and mixed well with the broth, shred between 2-4 cooked chicken breasts to add into the mixture for the last 10 minutes. Stir occasionally on low-medium heat to let the broth simmer.
- Dish up with a side of buttered sourdough and enjoy!
