If you’re looking for a recipe to cook with your flatmates, then you’ve found the perfect dish to try something new and delicious. This Italian/Korean fusionKimchi Alfredois simple, easy and quick; making the student staple pasta just a bit more exciting. With no meat included, it's easy to substitute the dairy options out for plant-based alternatives.
Ingredients: (serves 2-3)
½ brown onion (diced)
2 cloves of garlic (finely diced)
2 tablespoons of butter
½ cup/60g of parmesan (grated)
1 cup/200ml of double cream
80g kimchi (diced)
180g Pasta
Method:
Start by adding olive oil to a pan on medium heat, then add in the onion and cook for 3-4 minutes or until soft and brown. At the same time set away the pasta to boil in a separate pot.
Once the onions have cooked, add in the garlic and kimchi. Keep cooking until fragrant (1-2 mins).
After 2 minutes stir in the butter.
Once the butter has melted and is mixed in with the onions garlic and kimchi, add the cream and parmesan. For a thin sauce cook for 2-3 mins. For a thick reduced sauce cook for 4-5 mins.
Mix in the cooked pasta, and reserve some pasta water to add to the sauce if it overly reduced and thickened.
Plate, garnish and enjoy!
Optional add-ins:
Mushrooms sliced, add in at the same time as onion.
