The best recipe I got from TikTok

A delicious, nutritious curry taken right from the TikTok food scene – and its vegan!

My recent obsession meal for the past two months has been roasted chickpea Thai curry. And yes, I got the original recipe from TikTok.

TikTok and Instagram are slowly beginning to change approaches to cooking as scrolling through saved videos and seeing what appeals the most is slowly replacing flipping through a recipe book, or even scrolling through a blog. Short videos make delicious meals easy and achievable - just like this one.

This is a hearty, protein full meal that is also vegan - a truly great TikTok find. 

Fast and low budget, this can be whipped up in 30-40 minutes, and easily customised! This is a hearty, protein full meal that is also vegan - a truly great TikTok find. 

Ingredients for the chickpeas:

  • Tin of Chickpeas
  • Some olive oil
  • 1 teaspoon Garam Masala 
  • 1 teaspoon salt

Ingredients for the curry:

  • Some oil for the pan - any will work
  • 1 large white onion, finely chopped - red onion also works fine
  • 3 garlic cloves, minced
  • 1 tablespoon of fresh ginger, grated
  • 3 tablespoons of red Thai curry paste - I’ve been using yellow instead of red which also does the job
  • 300ml vegetable stock
  • 400ml coconut milk
  • As much spinach as you would like

Optional:

  • An extra tin or two of chickpeas to go in the sauce if you want a thicker sauce - I tend to just have the roasted chickpeas on top
  • Peppers
  • Broccoli 

Step 1 - Preheat the oven to 180ºC

Step 2 - In a bowl, mix one tin of chickpeas with the oil, garam masala and salt. Line a baking tray with paper and spread the mixture out before placing in the oven for 20-25 minutes

Step 3 - In a pan, add the oil and fry the onions until translucent. Add the ginger and garlic and fry for a little bit longer before adding the curry paste. At this point, add the broccoli, peppers and extra chickpeas if you are using them. 

Step 4 - Add the coconut milk and vegetable stock. Bring to a simmer and mix in the spinach. Serve with rice. 

This recipe makes around three to four meals. Hope you enjoy!
